Hybrid Pansy?




When Pansies go wild! God said, "Dear Tiffany, I know how much you love your garden so I have protected them throughout the 4 teen degree freezes since October of 2010 so you can enjoy them longer. I am sorry but this also means the fleas and bugs will be bad this year. Enjoy!"

Nate Soccer Game 3






Wow Nate really did an amazing job today at his game. These pictures are from his last game because we couldnt have cameras today due to the photography company being present. Nate has improved so much and he really enjoys the sport. Its too bad the seasons are so short! You can hear my phone going off in the video since I am still open for business during the times he is playing but it got distracting so I keep it in the car now he he

Olive Gardens Stuffed Portabella Mushrooms



Yes I know it looks like a heart attack waiting to happen but they are supposed to be placed on a lovely dish so you dont see all that excess cheese smiling up at you. This is a recipe from a website I found where they copy 'kat' major resteraunt recipes. One of our favorites is the Olive Garden's Stuffed Portabella Mushroom. Wow were they good and did you know they have clams and clam juice in them!!! Never new that.
Mother! You MUST make the Fosha these!



* 8 -12 fresh mushrooms
* 1 (6 ounce) can clams (drained and finely minced, save 1/4 cup of clam juice for stuffing)
* 1 green onion, finely minced
* 1 egg (beaten)
* 1/2 teaspoon minced garlic
* 1/8 teaspoon garlic salt
* 1/2 cup Italian style breadcrumbs
* 1 teaspoon oregano leaves
* 1 tablespoon melted butter, cooled
* 2 tablespoons finely grated parmesan cheese
* 1 tablespoon finely grated romano cheese
* 2 tablespoons finely grated mozzarella cheese (for stuffing)
* 1/4 cup finely grated mozzarella cheese (for garnish)
* 1/4 cup melted butter
* fresh parsley (for garnish)

Directions:

Prep Time: 10 mins

Total Time: 45 mins

1. 1 Preheat the oven to 350°F.
2. 2 Lightly oil a small baking dish.
3. 3 Gently wash and stem mushrooms; pat dry (Save stems for another recipe).
4. 4 Combine clams, onions, garlic salt, minced garlic, butter and oregano in a bowl and mix well.
5. 5 Add Italian bread crumbs, egg, clam juice, mixing well.
6. 6 Add Parmesan, Romano, and Mozzarella cheeses to the clam stuffing and mix well.
7. 7 Place approximately 1 1/2 teaspoons of the clam stuffing mixture inside mushroom cavity and slightly mound (You should be able to stuff between 8- 12 mushrooms depending on the size of mushrooms).
8. 8 Place the stuffed mushrooms in slightly oiled baking dish and pour 1/4 cup melted butter over the top of the mushrooms.
9. 9 Cover and place in oven for about 35- 40 minutes.
10. 10 Remove cover; sprinkle the 1/4 cup freshly grated mozzarella cheese on top and pop back in oven just so the cheese melts slightly.
11. 11 Garnish with freshly diced parsley.
12. 12 Serve hot.

Thump Thump

Sounds like the kids next door are gettin crazy!

Nates first soccer practice & game






Nate was really excited to find out I enrolled him into soccer. He had missed 3 practices and 2 games but they let him jump right in. The practice did not have the team play so he had not yet gotten the concept of the game. On game day he was very confused as to what to do. He stood there looking at us or would run and look at us the same time which obviously is dangerous. The videos of his game were at the very beginnning when he was confused and shy but within the 2nd timing of the 1st game he jumped right in and started running around with all the kids. Towereds the end he almost made his first goal. It bounced off the pole so he was so close! The team won! He has another game on Tuesday so we will be doing alot of practicing within the next couple days to gear up for it!

Strawberry Cheescake Cuppy Cakes

I love baking...its a form of art for me but I dont necessarily like to eat it unless its ice cream. So I made these out of the blue. The recipe is actually for cheescake marmilaid but I used pie filling strawberries instead. Hubby is taking them to his co-workers tomorrow
