love to grill! I am doing a rack of pork
spare ribs to test a new seasoning system out. If its good enough we will be using it for Nates pork ribs on his birthday. Apple Wood chips for smoking, Apple Cider Vinegar, Brown Sugar, Apple Rub by Grill Mates I discovered that when working with spare ribs there is a membrane that covers them on the back that needs to be removed. Not sure if it goes the same with beef ribs? So that was removed along with a bunch of fat so they were nice and clean :) Poured some Apple Cider Vin and rubbed it in to open the pours of the meat allowing the seasoning in. Put a nice layer of the rub in but you DONT RUB IT IN. Then you put a layer of brown sugar on and wait for it to start melting on its own. I have no idea how it melts on its own that would be a question for a good person who listened in science class. Once it starts to melt good put another layer of rub it on there but remmeber dont rub it in dont even touch it! Then set the meat on the opposite side of the coals and start your Apple wood chips smoking.
